Covid-19 Comfort Food - Black Bean and Sweet Potato Enchilada

What are you cooking? I am a foodie. I cook a whole lot of exotic foods. I used to be capable of spending days preparing an ultra special dish. I am aging, and prefer to make quicker meals, even for guests. I will never be capable of dieting, even as the middle aged spread has become so difficult to shed. My solution is to have a serious exercise routine, so that I feel good about my body, and don’t even think about nibbling all day.

My favorite exercise is hiking up mountains. I don’t always have this kind of time, so I circle for miles around my neighborhood or at the local park. I have newly been enjoying yoga for strengthening all parts of my body*. The balance felt like a cruel joke at first, but I quickly improved. This dish that I am recommending came from my grocery store circular ad. I don’t even like black beans. If I cook a vegetarian meal, my husband usually gets up after dinner, and goes to the local take out food restaurant. But with this recipe, he didn’t, and I don’t think it was because the restaurant was temporarily closed because of the Covid virus. I do have to partially credit that my meat eating son has become a vegetarian in his early 20’s, influencing my husband’s food mind. But here is a recipe that I highly recommend. I made minor substitutions when I made it.
