Do you need ideas for Father's Day Recipes? My son, Dalton, is working half way across the country this summer.   He will be living in an apartment with 3 other boys that also have summer jobs at his company. The night before leaving, he asked me for the best buttermilk pancake recipe. Actually, he asked for his Dad's recipe because my husband cooks pancakes on most weekends, and changes the types of flours and toasted nuts he uses every week. Then he asked me for a beer batter pancake recipe. I'm not sure why - I have made beer batter onion rings and shrimp, beer sauces... and beer bread, but not beer pancakes. While looking for the recipes, I realized that I will be the only one home to cook my husband his Father's Day breakfast. Being a foodie, I love trying new recipes.**I actually  tried the Beer pancakes below for dinner with Italian Sausages and a tomato basil salad. It was a fun change of pace. So, below are three recipes that might make a nice Father's Day Breakfast surprise. The 3rd recipe is what Dalton cooked me for my Mother's Day Breakfast. He substituted our homemade smoked salmon for the sausage. Dalton said, "Are you sure you want shrimp for breakfast". Buttermilk Beer Super Fluffy Pancakes from the Beeroness.com

(It doesn't say how many it makes, but with only one cup of flour like the recipe above, you may want to double or triple the recipe if you're cooking for more than 2)Ingredients:2 eggs, divided½ tsp cream of tartar½ cup beer (wheat beer, pale ale, brown ale work best)¼ cup buttermilk (or heavy cream)1 tsp vanilla extract1 cup flour2 tbs sugar1 tsp baking powder½ tsp baking soda3 tbs butterDirections: Set out a stand mixer (or a bowl and a hand mixer), a small bowl and a large bowl. Separate the eggs, putting the whites in the stand mixer and the yolks in the small bowl. Add the cream of tartar to the egg whites and beat on high until stiff peaks form, about 5 minutes. Add the beer, buttermilk, and vanilla to the egg yolks, beat until well combined. In the large bowl stir together the flour, sugar, baking powder and baking soda. Add the yolk mixture to the dry ingredients and stir until combined. Gently fold the egg whites into the pancake batter. Add the butter to a preheated griddle (preheated to 350) or large skillet over medium high heat, push around until melted. About ¼ cup at a time, pour the pancake batter on the preheated surface. Allow to cook until bubbles form in the center, flip and allow to cook until golden brown on the underside.============================================================================================================================================================Father's Day Recipes for Breakfast No. 2 - Other Batter Pancakes:This recipe arrived in an email to me this week from Cooking.com, but it sounds perfect for Father's Day Breakfast too! Bacon-Banana Buttermilk Pancakes with Bourbon Syrup

4 to 6 Servings

ingredients

  • 6 thick-cut slices maple-smoked bacon, or to taste
  • 2 tablespoons bourbon
  • 1 cup maple syrup
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 2 eggs, lightly beaten
  • 2 cups buttermilk
  • 2 tablespoons sugar
  • Salted butter, for greasing the pan and for serving
  • 1/2 cup thinly sliced banana

directions

In a saute pan, cook the bacon on medium heat until thoroughly crispy, about 10 minutes. Set aside on paper towel, blotting both sides, to drain. When cool enough to handle, crumble and chop the bacon into pieces and set aside. (Alternatively, place slices on a rack set in a shallow pan and bake in the oven at 400 degrees F for 12 to 15 minutes.)In a small saucepan over medium heat, heat the bourbon to a simmer, then stir in the maple syrup to warm. Set aside.Into a large bowl, sift together the flour, salt, baking powder and baking soda. Stir in most of the bacon, reserving some for garnish.In another bowl, whisk together the eggs, buttermilk and sugar.Make a well in the center of the flour mixture and stir the buttermilk, bacon and banana mixture into the batter until the flour has just been absorbed. Gently stir the bananas into the batter.Over medium heat grease a nonstick saute pan or griddle with butter, and pour the pancakes using a 1/4 cup measuring scoop. Cook until the edges are cooked and bubbles are beginning to form in the center, about 3 or 4 minutes. Flip and cook until golden, 1 or 2 minutes more. Serve with maple bourbon syrup and pats of salted butter.
